Description
Honeycomb is honey in the form the bees actually leave it: nectar from Canadian wildflower pasture, capped inside a sheet of pale wax and lifted out whole rather than spun, strained and poured into a bottle. Drizzle packs it that way on purpose, so what reaches your spoon is one ingredient and nothing else.
Cut into it and the comb gives way; the wax is completely edible and softens as you chew, releasing the honey it was holding. Some people chew and swallow the whole piece, some park the wax on the side of the plate. Either is fine.
It earns its keep on a grazing board, sitting whole between aged cheddar, blue cheese, prosciutto, figs and crackers so guests can cut their own wedge. Away from the board it goes on Greek yogurt and granola, into hot tea, onto warm sourdough or a scone, over burrata or roasted carrots, and around the rim of a cocktail glass. At 200 g, a round is roughly five 40 g servings, and each serving is 60 calories with no fat and no sodium.
The round arrives lidded and ready to set down, which is also why it travels well as a host gift, a stocking filler or a corporate box at Christmas and Thanksgiving.
Storage matters with raw comb. Cold makes it firm and granular, so keep it sealed at room temperature rather than in the fridge; if it stiffens, a few minutes with the closed container in warm water brings it back. Unopened, it keeps on the shelf.
From Drizzle, a Certified B Corporation, female founded in Calgary and sourcing from Canadian apiaries that keep bees on diverse floral forage. Kosher certified, gluten free and non-GMO. Product of Canada.
Caution: do not feed honey to infants under one year of age.
- Raw Comb, Never Heated: One ingredient, honeycomb, sealed in wax by bees foraging Canadian wildflower pasture and packed without heating or filtering. You get the floral character of the nectar itself, which is why no two rounds taste quite alike.
- The Wax Is Edible: The comb is 100% edible, so there is nothing to strain or scoop around. Cut a wedge, eat it straight off the spoon, and the wax softens as you chew while the honey releases. Chew and swallow, or set the wax aside.
- Cheese Board Centrepiece: Set the round out whole beside aged cheddar, brie, prosciutto, figs and crackers and let guests cut their own wedge. The lidded container drops into a gift basket or stocking, so hosting and giving use the same piece.
- More Than Toast: Spoon it over Greek yogurt and granola, stir a piece into hot tea, press it onto warm sourdough, finish burrata or roasted carrots, or rim a cocktail glass. Anywhere you would pour liquid honey, this goes one step further.
- Store At Room Temperature: Raw honeycomb firms up and granulates in cold storage, so keep it sealed at room temperature and out of the fridge. If it stiffens, sit the closed container in warm water for a few minutes. 200 g is about five 40 g servings.
