DoMatcha Master's Choice is the tea master's own blend - the one meant for the bowl you sit down with, not the one you rush.

It begins in the Kyoto region of Japan, where tencha leaves are shaded on the bush to build the savoury depth matcha is known for. Only the youngest top leaves are picked. They are steamed soon after harvest, held at zero degrees through the year, stripped of stems and veins, then ground between granite stones - a slow, labour-intensive step that produces the fine, deep green powder in this tin.

The result is a full-bodied, robust cup with real umami weight and a rounded finish. DoMatcha's 16th-generation Tea Master, Kazunori Handa, blends it alongside a Japanese grower and grinder whose family has worked in tea production for more than 300 years.

Ingredients: 100% Japanese Matcha Green Tea. Nothing added, nothing blended in. Product of Japan.

To prepare traditionally: sift 1 teaspoon into a warmed bowl, add 60-70 ml of water at about 80 C, and whisk briskly in a W motion with a bamboo chasen until a fine foam forms. For a latte, whisk the same amount with a splash of hot water first, then pour over 200 ml of steamed or cold milk. It also folds into smoothies, ice cream, frosting and baked goods.

Each 30g tin holds approximately 25 servings. The powder is sealed in a foil pouch inside the tin with an oxygen-absorbing packet to hold it at peak freshness. After opening, reseal and store in the refrigerator, away from heat, light and liquid, and use within a few weeks for the best colour and flavour.
