The chasen is the tool the Japanese tea ceremony was built around, and it is still the standard way to get matcha to dissolve properly. Dozens of hand-split tines move through the bowl at once, breaking the powder apart and folding air in as they go, so you finish with an even green foam rather than grit at the bottom of the cup.

This one is carved from a single piece of sustainable bamboo. The outer tines curl outward and the inner tines stand in a cone at the centre, the two-ring structure that gives a chasen its spring and lets it work in a shallow chawan as easily as in a mug.

Getting the most out of it

Soak the tines in warm water for about a minute before the first use, and briefly each time after that. Warm bamboo flexes, dry bamboo snaps. The tight curl you see out of the package will relax and open as it softens, which is the whisk reaching its working shape.

Sift your matcha, add a little hot but not boiling water, and whisk briskly in a zigzag or W motion rather than stirring in circles. Lift the whisk at the end to pull the foam up.

Rinse under warm running water only. No soap, no dishwasher, no scrubbing. Shake off the water and stand it tines-up on a whisk holder, or upright on the counter, until it dries all the way through. Leaving a chasen damp and lying on its side is what shortens its life more than anything else.

A chasen is a wear item, and this routine is what keeps the tines springy and the fan shape intact. Pairs naturally with ceremonial-grade matcha, a chawan bowl, a bamboo scoop and a whisk stand.
