Cafés Mers du Sud artisan-roasts this Italian-style espresso blend to a medium-dark level, the range that gives espresso its weight. The beans are taken to full body and deep colour, then pulled off before they scorch, which is why the cup tastes rich rather than burnt and finishes clean, with no bitterness and no aftertaste.

Pull it through a portafilter and it settles under a thick, opaque crema, the layer espresso drinkers look for. Grind it medium and it works just as well in a drip machine or a moka pot on the stove, or pour it straight into the hopper of an automatic bean-to-cup and let the machine do the rest. Because it ships as whole beans, you set the grind to match your equipment and grind only what the next pot needs.

Freshness is built into the bag. A one-way valve lets the gases from roasting escape while keeping oxygen out, so the aroma in week six is close to the aroma on day one. The pouch reseals after every use.
