This is Canada Grade A, Amber colour class with Rich Taste. Maple is graded by how light the syrup runs, and amber sits in the middle of that range. Golden syrup from the early run is delicate and disappears under strong flavours. Dark syrup from the late run can take over a dish. Amber is the one most people reach for when they want the maple to be unmistakable but still let the pancake, the yogurt or the glaze come through.

Worth knowing: Canada Grade A is the only grade in the Canadian system. Golden, amber and dark describe colour and taste, not quality. All of them are pure maple syrup. What changes is how loud the maple is.

At 750 ml it is a full-size bottle, near fifty tablespoons, which matters if you have ever bought a maple souvenir and found it held one breakfast. This is the bottle you keep in the cupboard and use through the season.
